White Balsamic Vinegar is an imitation

White balsamic vinegar is not an authentic balsamico product. This is the crudest form which can actually be called the fake variety. They are neither fermented nor oxidized and can be produced in a day. Today we find many imitation balsamics in the market. Some are labeled “white balsamic vinegar,” and claim no caramel or artificial colorings have been added. This vinegar is not authentic from any standpoint. Coloring is never added to real balsamic vinegar. The deep color of tradizionale balsamic vinegar comes from the natural caramelization of the grape must and from years standing in wood barrels. “Caramel” is never added to tradizionale aceto balsamico.

Producers making imitation balsamic vinegars try to sell it as aceto balsamico di Modena although the truth is that imitation balsamico vinegar is not made in Modena at all nor in Reggio. These fake varieties do not even contain grape must, leave alone being processed in the traditional way. They are nowhere near aceto balsamico tradizionale. These vinegars are generally red wine cut with water and to change its character in order to deceive customers the producers add cane sugar, caramel and vanilla to it.
